Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
Green Goddess Dressing
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh chives chopped
  • 1/4 cup fresh basil chopped
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, diced cucumber, halved cherry tomatoes, and sliced avocado.
  2. Use a salad spinner to wash and dry the greens thoroughly.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, parsley, chives, basil, lemon juice, minced garlic, salt, and black pepper until smooth.
Combine and Serve
  1. Drizzle the green goddess dressing over the salad and toss gently to combine.
