Ingredients
  

Turkey and Marinade
  • 1 lb ground turkey lean ground turkey is preferred
  • 1/4 cup soy sauce low sodium recommended
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp ginger freshly grated
Rice and Toppings
  • 2 cups brown rice uncooked
  • 2 cups water
  • 1 cup broccoli florets steamed
  • 1 carrot carrot shredded
  • 1/4 cup green onions sliced
  • 2 tbsp sesame seeds for garnish

Method
 

Prepare the Rice
  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a rice cooker, combine the rinsed rice and 2 cups of water. Cook according to the rice cooker's instructions.
Make the Teriyaki Sauce
  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
Cook the Turkey
  1. In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes.
  2. Drain excess fat if necessary, then pour the teriyaki sauce over the turkey. Stir to combine and cook for an additional 5 minutes until the sauce thickens slightly.
Assemble the Bowl
  1. Spoon the cooked brown rice into bowls.
  2. Top with the teriyaki turkey mixture, steamed broccoli, shredded carrot, and sliced green onions.
  3. Sprinkle sesame seeds on top for garnish.

Notes

Feel free to customize the vegetables based on your preference. You can also use quinoa instead of brown rice for a different flavor.
