Ingredients

For the Teriyaki Ground Turkey
  • 1 lb ground turkey lean
  • 1 cup teriyaki sauce store-bought or homemade
  • 2 tablespoons vegetable oil for cooking
  • 1 teaspoon ginger freshly grated
  • 2 cloves garlic minced
For the Rice
  • 2 cups jasmine rice or brown rice
  • 4 cups water
For the Vegetables
  • 1 cup broccoli florets fresh or frozen
  • 1 cup carrots sliced
  • 1 cup snap peas fresh
  • 2 tablespoons sesame seeds for garnish

Method

Cook the Rice
  1. Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
  2. Once cooked, fluff the rice with a fork and set aside.
Prepare the Turkey
  1. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  3. Pour the teriyaki sauce over the cooked turkey, stirring to combine. Let it simmer for another 3-5 minutes, allowing the flavors to meld.
Cook the Vegetables
  1. In a separate pot, steam the broccoli, carrots, and snap peas for about 5-7 minutes until tender but still crisp.
Assemble the Bowls
  1. In serving bowls, layer the cooked rice, followed by the teriyaki ground turkey and steamed vegetables.
  2. Garnish with sesame seeds before serving.
