Ingredients
  

For the Smash Burgers
  • 1 lb ground beef 80/20 blend for juiciness
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 4 slices cheddar cheese optional
For the Street Corn Mixture
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise for creaminess
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder for spice
  • 1 tbsp cilantro chopped, for garnish
For Assembly
  • 8 small flour tortillas soft and warm
  • 1 avocado sliced for topping
  • 1/2 cup sour cream for drizzling

Method
 

Prepare the Street Corn Mixture
  1. Grill the corn until charred, then remove kernels from the cob.
  2. In a mixing bowl, combine corn kernels, mayonnaise, cotija cheese, lime juice, and chili powder. Mix well.
Cook the Smash Burgers
  1. Preheat a griddle over medium-high heat.
  2. Form ground beef into balls, season with salt and pepper, and place on the griddle.
  3. Smash the balls down with a spatula to form patties and cook for about 3-4 minutes on each side.
  4. Add cheese slices on top of patties during the last minute of cooking to melt.
Assemble the Tacos
  1. Warm the tortillas on the griddle for a few seconds on each side.
  2. Place a smash burger on each tortilla, top with the street corn mixture, avocado slices, and a drizzle of sour cream.
  3. Garnish with chopped cilantro and serve immediately.
