Prepare the Street Corn Mixture
- Grill the corn until charred, then remove kernels from the cob.
- In a mixing bowl, combine corn kernels, mayonnaise, cotija cheese, lime juice, and chili powder. Mix well.
Cook the Smash Burgers
- Preheat a griddle over medium-high heat.
- Form ground beef into balls, season with salt and pepper, and place on the griddle.
- Smash the balls down with a spatula to form patties and cook for about 3-4 minutes on each side.
- Add cheese slices on top of patties during the last minute of cooking to melt.
Assemble the Tacos
- Warm the tortillas on the griddle for a few seconds on each side.
- Place a smash burger on each tortilla, top with the street corn mixture, avocado slices, and a drizzle of sour cream.
- Garnish with chopped cilantro and serve immediately.
