Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Cheesecake Filling
  • 8 oz cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries chopped
Topping
  • 1/2 cup fresh strawberries sliced
  • 1 tablespoon granulated sugar for macerating

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of a lined baking sheet to form an even layer.
Make the Cheesecake Filling
  1. In another bowl, beat the cream cheese until smooth using an electric mixer.
  2. Add sour cream, powdered sugar, and vanilla extract. Mix until creamy and well combined.
  3. Fold in the chopped strawberries gently.
Assemble the Bites
  1. Scoop the cheesecake filling onto the crust in small bite-sized portions.
  2. Chill in the refrigerator for at least 1 hour to set.
Prepare the Topping
  1. In a small bowl, combine sliced strawberries with sugar and let sit for 10 minutes to macerate.
  2. Top each cheesecake bite with the macerated strawberries before serving.
