Prepare the Egg Mixture
- Preheat the oven to 325°F (163°C).
- In a blender, combine the eggs, milk, cheddar cheese, cream cheese, salt, and pepper. Blend until smooth.

- In a mixing bowl, combine the cooked bacon, spinach, and bell pepper.
- Pour the egg mixture over the add-ins and stir gently to combine.
Bake the Egg Bites
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into each muffin cup, filling them about 3/4 full.
- Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and lightly golden.
- Remove from the oven and let cool for a few minutes before removing from the muffin tin.
