Ingredients
  

Salad Base
  • 2 cups shredded cabbage green or purple
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup red bell pepper sliced
  • 1 cup fresh herbs mint and cilantro, chopped
  • 1 cup bean sprouts
Spicy Ginger Dressing
  • 3 tablespoons fresh ginger grated
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha adjust to taste
  • 1 teaspoon maple syrup or honey
Toppings
  • 1/4 cup peanuts chopped
  • 1/4 cup sesame seeds toasted

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine shredded cabbage, carrots, cucumber, red bell pepper, fresh herbs, and bean sprouts.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together grated ginger, soy sauce, rice vinegar, sesame oil, sriracha, and maple syrup until smooth.
Combine and Serve
  1. Drizzle the spicy ginger dressing over the salad and toss to combine.
  2. Top with chopped peanuts and toasted sesame seeds before serving.
