Method
Prepare the Filling
- In a mixing bowl, combine the spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper. Mix until well combined.
- Set the filling aside.
Assemble the Sandwiches
- Spread butter on one side of each slice of bread.
- On the unbuttered side of four slices, spread a generous amount of the spinach artichoke filling.
- Top with another slice of bread, buttered side up.
Cook the Sandwiches
- Heat a skillet over medium heat.
- Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from skillet and let cool for a minute before slicing.
