Ingredients
  

Filling
  • 1 cup fresh spinach chopped
  • 1 cup artichoke hearts canned or frozen, drained and chopped
  • 1 cup cream cheese softened
  • 1/2 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Bread
  • 8 slices bread your choice, such as sourdough or whole wheat
  • 4 tablespoons butter softened

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper. Mix until well combined.
  2. Set the filling aside.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side of four slices, spread a generous amount of the spinach artichoke filling.
  3. Top with another slice of bread, buttered side up.
Cook the Sandwiches
  1. Heat a skillet over medium heat.
  2. Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
  3. Remove from skillet and let cool for a minute before slicing.
