Ingredients
  

For the Spicy Maple Chicken
  • 4 pieces chicken thighs boneless, skinless
  • 1/4 cup maple syrup pure maple syrup
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon sriracha adjust to taste
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 1 tablespoon olive oil for cooking
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
For the Coconut Rice
  • 1 cup jasmine rice rinsed
  • 1 can coconut milk full-fat
  • 1 cup water
  • 1/2 teaspoon salt to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped, for garnish

Method
 

Prepare the Coconut Rice
  1. In a medium saucepan, combine jasmine rice, coconut milk, water, and salt.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in lime juice.
Cook the Spicy Maple Chicken
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season chicken thighs with salt and pepper, then add to the skillet. Cook for 5-7 minutes per side until browned and cooked through.
  3. In a bowl, mix maple syrup, soy sauce, sriracha, garlic, and ginger.
  4. Pour the sauce over the chicken in the skillet and cook for an additional 5 minutes, allowing the sauce to thicken.
Serve
  1. Serve the spicy maple chicken over the coconut rice, garnished with chopped cilantro.

Notes
