Method
Prepare the Oven and Pan
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
- In a small bowl, mix together the granulated sugar and cinnamon for the topping. Set aside.
Mix Dry Ingredients
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
Mix Wet Ingredients
- In another bowl, combine the apple cider, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Whisk until smooth.
Combine Mixtures
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Bake the Loaf
- Pour the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar topping evenly over the batter.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
