Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup apple cider preferably fresh
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
Topping
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  2. In a small bowl, mix together the granulated sugar and cinnamon for the topping. Set aside.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
Mix Wet Ingredients
  1. In another bowl, combine the apple cider, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Whisk until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Bake the Loaf
  1. Pour the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar topping evenly over the batter.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
