Ingredients
  

Chicken and Seasoning
  • 2 cups cooked chicken breast shredded or diced
  • 1 tablespoon olive oil for grilling
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Vegetables and Wrap
  • 4 large flour tortillas
  • 1 cup romaine lettuce shredded
  • 1 cup tomato diced
  • 1/2 cup red onion sliced
  • 1/2 cup corn canned or frozen
  • 1/2 cup black beans rinsed and drained
Dressing
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon hot sauce optional
  • 1 teaspoon honey optional
  • 1/4 teaspoon salt

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine the cooked chicken with olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
  2. Heat a grill over medium heat and grill the chicken mixture for about 5-7 minutes until heated through.
Make the Dressing
  1. In a small bowl, whisk together Greek yogurt, lime juice, hot sauce, honey, and salt until smooth.
Assemble the Wraps
  1. Lay a tortilla flat on a cutting board. Layer with shredded lettuce, diced tomato, sliced red onion, corn, black beans, and the grilled chicken mixture.
  2. Drizzle with the dressing and roll the tortilla tightly to form a wrap.
  3. Repeat with the remaining tortillas and ingredients.
Serve
  1. Cut the wraps in half and serve immediately with extra dressing on the side if desired.
