In the bowl of a stand mixer, cream the softened butter with both sugars for about 1 to 2 minutes until well combined. Add in the eggs one at a time along with the vanilla extract, mixing until fully combined.
Slowly add in your dry ingredient mixture to the butter-sugar mixture. Mix on low speed until just combined; gently fold in the chocolate chips.
Cover the cookie dough tightly with plastic wrap or transfer it into an airtight container. Place it in the refrigerator to chill for at least 2 hours.
Preheat your oven to 350°F (177°C). Line baking sheets with parchment paper.
Using a 1.5 tablespoon cookie scoop, drop rounded balls of dough onto your prepared baking sheets.
Bake in your preheated oven for about 10-12 minutes or until the edges are lightly golden brown. Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.
