Wash and dry the cucumbers well. Chop each cucumber in half and smash each piece gently before chopping into one-inch pieces. Transfer to a medium-sized bowl.
Peel the avocado and chop it into bite-sized pieces before adding it to the bowl with the smashed cucumbers.
Add crumbled feta cheese, chopped pistachios, fresh dill, and chives into the bowl and mix well.
In a separate jar, combine olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk until emulsified.
Pour the dressing over the salad mixture and toss gently until evenly coated. Optionally, sprinkle more fresh herbs on top before serving.
