Prepare the Chicken
- Place the chicken thighs in the slow cooker.
- In a bowl, whisk together honey, soy sauce, ketchup, rice vinegar, sesame oil, garlic, ginger, and black pepper.
- Pour the sauce over the chicken in the slow cooker.
Cook the Chicken
- Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Serve
- Remove the chicken from the slow cooker and shred it with two forks.
- Return the shredded chicken to the slow cooker and stir to coat with the sauce.
- Serve over rice and garnish with sesame seeds and sliced green onions.
