Ingredients
  

Chicken and Sauce
  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 cup sesame seeds for garnish
  • 2 green onions sliced for garnish

Method
 

Prepare the Chicken
  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, whisk together honey, soy sauce, ketchup, rice vinegar, sesame oil, garlic, ginger, and black pepper.
  3. Pour the sauce over the chicken in the slow cooker.
Cook the Chicken
  1. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Serve
  1. Remove the chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
  3. Serve over rice and garnish with sesame seeds and sliced green onions.
