Ingredients
  

Beef and Broth
  • 2 pounds beef chuck roast cut into chunks
  • 4 cups beef broth low sodium
  • 1 cup soy sauce low sodium
  • 1 tablespoon ginger fresh, grated
  • 4 cloves garlic minced
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
Vegetables
  • 2 carrots carrots sliced
  • 1 cup shiitake mushrooms sliced
  • 2 cups bok choy chopped
  • 1 cup green onions sliced
Noodles
  • 8 ounces ramen noodles discard seasoning packets
  • 4 cups water

Method
 

Prepare the Beef
  1. In a slow cooker, combine beef chuck roast, beef broth, soy sauce, ginger, garlic, brown sugar, and sesame oil.
  2. Stir well to ensure the beef is coated in the sauce.
Add Vegetables
  1. Add sliced carrots, shiitake mushrooms, and bok choy to the slow cooker.
  2. Stir to combine all ingredients.
Cook
  1. Cover and cook on low for 8 hours or until the beef is tender.
Prepare Noodles
  1. About 30 minutes before serving, cook ramen noodles according to package instructions in a separate pot.
  2. Drain and set aside.
Serve
  1. Once the beef is tender, shred it with two forks and stir it back into the slow cooker.
  2. Serve the beef and broth over the cooked ramen noodles and top with sliced green onions.
