Preparation
- Preheat the oven to 350°F (175°C). Grease a baking pan (8x8 inches).
- In a mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix the wet ingredients: grated zucchini, sugar, vegetable oil, egg, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
- Pour the batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
