Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
Wet Ingredients
  • 1 cup grated zucchini about 1 medium zucchini
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking pan (8x8 inches).
  2. In a mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the wet ingredients: grated zucchini, sugar, vegetable oil, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake in the preheated oven for 25 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
