Ingredients
  

  • 1 cup jasmine rice
  • 2 cups low-sodium chicken broth
  • 1 lb shrimp peeled and deveined
  • 8 oz Andouille sausage sliced
  • 1 cup bell peppers chopped, mixed colors
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 2 tsp Cajun seasoning

Method
 

  1. Start by preparing all your ingredients. Chop the onion and bell peppers into bite-sized pieces, and mince the garlic.
  2. In a large skillet over medium heat, add a drizzle of olive oil. Sauté the onions and bell peppers until they soften—about 5 minutes. Then, add the minced garlic along with the sliced Andouille sausage. Cook until browned.
  3. Stir in the jasmine rice along with Cajun seasoning into the skillet. Cook the rice for about one minute.
  4. Pour in the low-sodium chicken broth while bringing it to a boil. Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes until the rice is tender.
  5. Fold in your prepared shrimp into the rice mixture. Cover again and cook for an additional 5-7 minutes until shrimp are pink and opaque.
  6. After letting it sit for about five minutes off heat, fluff your Shrimp Sausage Dirty Rice with a fork. Taste it one last time; adjust seasonings if needed before serving hot!
