Ingredients
  

Shrimp and Base
  • 1 pound large shrimp peeled and deveined
  • 2 cups cooked rice white or brown
  • 1 large avocado diced
Mango Salsa
  • 1 cup mango diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup red bell pepper diced
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/2 teaspoon salt
Lime-Chili Sauce
  • 1/4 cup sour cream
  • 1 lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Method
 

Prepare the Shrimp
  1. Preheat the grill to medium-high heat. Season the shrimp with salt and grill for 2-3 minutes on each side until they are pink and opaque.
Make the Mango Salsa
  1. In a mixing bowl, combine the diced mango, red onion, red bell pepper, cilantro, lime juice, and salt. Mix well and set aside.
Prepare the Lime-Chili Sauce
  1. In a small bowl, mix together the sour cream, lime juice, chili powder, garlic powder, and salt until smooth.
Assemble the Bowls
  1. In each bowl, layer the cooked rice, grilled shrimp, diced avocado, and top with mango salsa. Drizzle with lime-chili sauce before serving.
