Prepare the Ingredients
- Wash and trim the asparagus, slice the mushrooms and bell pepper, and mince the garlic.
- In a small bowl, mix soy sauce, sesame oil, cornstarch mixture, and grated ginger to create the stir-fry sauce.
Cook the Shrimp
- Heat vegetable oil in a wok over medium-high heat.
- Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.
Stir-Fry the Vegetables
- In the same wok, add garlic, asparagus, mushrooms, and bell pepper. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Combine and Serve
- Return the shrimp to the wok, pour in the stir-fry sauce, and toss everything together. Cook for an additional 2 minutes until heated through.
- Serve hot over rice or noodles.
