Ingredients
  

Seafood
  • 1 pound shrimp peeled and deveined
Vegetables
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms sliced
  • 1 medium bell pepper sliced
  • 2 cloves garlic minced
Sauce
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
  • 1 teaspoon ginger grated
Oil
  • 2 tablespoons vegetable oil for cooking

Method
 

Prepare the Ingredients
  1. Wash and trim the asparagus, slice the mushrooms and bell pepper, and mince the garlic.
  2. In a small bowl, mix soy sauce, sesame oil, cornstarch mixture, and grated ginger to create the stir-fry sauce.
Cook the Shrimp
  1. Heat vegetable oil in a wok over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove and set aside.
Stir-Fry the Vegetables
  1. In the same wok, add garlic, asparagus, mushrooms, and bell pepper. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Combine and Serve
  1. Return the shrimp to the wok, pour in the stir-fry sauce, and toss everything together. Cook for an additional 2 minutes until heated through.
  2. Serve hot over rice or noodles.
