  • 1 pound spicy Italian sausage casings removed
  • 1 pound gnocchi store-bought
  • 2 cups butternut squash peeled and cubed
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons hot honey for drizzling
Optional Garnish
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Prepare the Oven and Ingredients
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the butternut squash, olive oil, salt, and black pepper. Toss to coat.
Roast the Vegetables
  1. Spread the butternut squash mixture onto a large baking sheet in a single layer.
  2. Bake in the preheated oven for 15 minutes.
Add Sausage and Gnocchi
  1. After 15 minutes, remove the baking sheet from the oven and add the spicy sausage and gnocchi.
  2. Toss everything together and spread out evenly on the sheet.
  3. Return to the oven and bake for an additional 15-20 minutes, or until the sausage is cooked through and the gnocchi are golden brown.
Finish and Serve
  1. Remove from the oven and drizzle with hot honey.
  2. Garnish with fresh parsley if desired and serve immediately.

Notes
