Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder ensure it's fresh
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup milk can use buttermilk for extra tang
  • 1 large egg beaten
  • 1/4 cup olive oil
Add-ins
  • 1 cup shredded cheese cheddar or feta work well
  • 1/2 cup pitted olives chopped, green or black

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
Combine Wet Ingredients
  1. In another bowl, mix together the milk, beaten egg, and olive oil until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Add Cheese and Olives
  1. Fold in the shredded cheese and chopped olives until evenly distributed.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve warm or at room temperature.
