Ingredients
  

Vegetables
  • 2 medium zucchini sliced into half-moons
  • 8 ounces mushrooms sliced
  • 1 medium onion sliced
Seasoning
  • 2 tablespoons olive oil for sautéing
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional

Method
 

Prepare the Vegetables
  1. Wash and slice the zucchini into half-moons, slice the mushrooms, and slice the onion.
  2. Set the prepared vegetables aside.
Sauté the Vegetables
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced onions and sauté for about 3 minutes until they start to soften.
  3. Add the sliced mushrooms and cook for another 5 minutes until they release their moisture.
  4. Finally, add the zucchini, salt, pepper, and garlic powder. Sauté for an additional 5-7 minutes until the zucchini is tender but still crisp.
Serve
  1. Remove from heat and serve warm as a side dish.
