Ingredients
  

Rice Base
  • 2 cups sushi rice rinsed
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
Salmon Mixture
  • 1 pound cooked salmon flaked
  • 1 cup cream cheese softened
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha adjust to taste
  • 1 tablespoon green onions chopped
Topping
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter melted
  • 1 tablespoon sesame seeds

Method
 

Prepare the Rice
  1. In a pot, combine sushi rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  2. Remove from heat and let sit for 10 minutes. Fluff with a fork and mix in rice vinegar, sugar, and salt.
Make the Salmon Mixture
  1. In a mixing bowl, combine flaked salmon, cream cheese, mayonnaise, sriracha, and green onions. Mix until well combined.
Assemble the Bake
  1. Preheat the oven to 350°F (175°C). Spread the rice evenly in the bottom of a baking dish.
  2. Layer the salmon mixture over the rice.
  3. In a separate bowl, mix panko breadcrumbs with melted butter and sesame seeds. Sprinkle evenly over the salmon mixture.
Bake
  1. Bake in the preheated oven for 25-30 minutes until the top is golden brown and heated through.
  2. Let cool for a few minutes before serving. Garnish with additional green onions if desired.

Notes
