Ingredients
  

Salmon and Vegetables
  • 4 oz salmon fillets skinless
  • 4 cups mixed greens such as romaine and spinach
  • 1 cup cherry tomatoes halved
  • 1 avocado ripe diced
  • 1 cup cucumber diced
  • 1 cup hard-boiled eggs sliced
  • 1/2 cup crumbled blue cheese
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Salmon
  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, avocado, cucumber, and sliced hard-boiled eggs.
  2. Flake the grilled salmon and add it to the salad.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with crumbled blue cheese before serving.
