Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on preferred
Marinade
  • 1 cup apple cider unsweetened
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 2 cups carrots sliced
  • 2 cups potatoes cubed
  • 1 cup onion sliced

Method
 

Marinate the Chicken
  1. In a bowl, combine apple cider, olive oil, rosemary, garlic, salt, and pepper. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Cook the Chicken
  1. Heat a large skillet over medium heat. Remove chicken from marinade, reserving marinade. Add chicken to the skillet, skin side down, and cook for 5-7 minutes until browned. Flip and cook for another 5 minutes.
Add Vegetables
  1. Add carrots, potatoes, and onion to the skillet around the chicken. Pour reserved marinade over the chicken and vegetables.
Simmer
  1. Cover the skillet and reduce heat to low. Simmer for 30 minutes or until chicken is cooked through and vegetables are tender.
Serve
  1. Transfer chicken and vegetables to a serving platter. Drizzle with any remaining sauce from the skillet and serve warm.
