Method
Marinate the Chicken
- In a bowl, combine apple cider, olive oil, rosemary, garlic, salt, and pepper. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Cook the Chicken
- Heat a large skillet over medium heat. Remove chicken from marinade, reserving marinade. Add chicken to the skillet, skin side down, and cook for 5-7 minutes until browned. Flip and cook for another 5 minutes.
Add Vegetables
- Add carrots, potatoes, and onion to the skillet around the chicken. Pour reserved marinade over the chicken and vegetables.
Simmer
- Cover the skillet and reduce heat to low. Simmer for 30 minutes or until chicken is cooked through and vegetables are tender.
Serve
- Transfer chicken and vegetables to a serving platter. Drizzle with any remaining sauce from the skillet and serve warm.
