- Preheat your oven to 375°F (190°C). Lay baguette slices on a baking sheet. Melt unsalted butter and stir in minced garlic. Brush garlic butter on each slice, season with salt and pepper, and bake for about 10 minutes until golden brown.
- In a large bowl, combine diced peaches and chopped tomatoes. Drizzle in olive oil and lemon juice, add fresh basil, and mix gently until well combined.
- Whisk ricotta cheese in another bowl until smooth and creamy. Optionally add a pinch of salt or lemon zest for extra flavor.
- Spread whipped ricotta on toasted baguette slices and top with the peach-tomato mixture.
- Drizzle balsamic glaze over each bruschetta and serve immediately while warm.
