Quick Peach Bruschetta with Whipped Ricotta

Ingredients
  

  • 1 baguette baguette sliced thinly
  • 1/4 cup unsalted butter
  • 4 cloves garlic finely minced
  • to taste salt
  • to taste pepper
  • 1 pint chopped tomatoes
  • 3 medium peaches diced
  • 2 tablespoons extra virgin olive oil
  • 1/2 lemon lemon juice
  • 1 cup ricotta cheese
  • to drizzle balsamic glaze for drizzling

Method
 

  1. Preheat your oven to 375°F (190°C). Lay baguette slices on a baking sheet. Melt unsalted butter and stir in minced garlic. Brush garlic butter on each slice, season with salt and pepper, and bake for about 10 minutes until golden brown.
  2. In a large bowl, combine diced peaches and chopped tomatoes. Drizzle in olive oil and lemon juice, add fresh basil, and mix gently until well combined.
  3. Whisk ricotta cheese in another bowl until smooth and creamy. Optionally add a pinch of salt or lemon zest for extra flavor.
  4. Spread whipped ricotta on toasted baguette slices and top with the peach-tomato mixture.
  5. Drizzle balsamic glaze over each bruschetta and serve immediately while warm.
