Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture firmly into the bottom of a greased 9x13 inch baking pan.
  4. Bake for 10 minutes, then remove from the oven and let cool.
Make the Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
Bake the Cheesecake Bars
  1. Pour the filling over the cooled crust and spread evenly.
  2. Bake in the preheated oven for 40-45 minutes, or until the center is set.
  3. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours before slicing.
