Beat together the softened cream cheese, chive & onion spread, salt, pepper, garlic powder, and 1 ¼ cups of the shredded sharp cheddar cheese until smooth.
Place a double layer of cling wrap out on the counter, ensuring it's long enough to wrap around your cheese ball completely.
Sprinkle ⅓ cup of shredded cheddar cheese onto the cling wrap where you plan to place the bottom of your cheese ball.
Place the cheese ball mixture over the sprinkled cheddar. Use the remaining shredded cheese to cover the top and sides fully.
Wrap your cheese ball in cling wrap and press firmly to form a nice round shape.
Use thick rubber bands to double wrap the cheese ball into a pumpkin shape.
Chill your wrapped cheese ball in the fridge for at least 2 hours.
Once chilled, carefully remove the rubber bands and unwrap your creation. Top your pumpkin cheese ball with a bell pepper stem.
