Pecan Pie Double Baked Sweet Potatoes

Ingredients
  

  • 4 medium sweet potatoes washed and dried
  • 2 tbsp butter salted or unsalted
  • 3 tbsp maple syrup
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup pecans roughly chopped
  • 1 tsp cinnamon
  • 1/4 cup flour Can use oat flour or GF flour instead
  • 2 tbsp butter
  • 2 tbsp maple syrup

Method
 

  1. Preheat your oven to 425F degrees. Place the sweet potatoes directly onto the oven rack and bake until soft in the center, about 40 to 55 minutes.
  2. Reduce the oven temperature to 350F degrees. Let the sweet potatoes cool down until manageable, then slice each potato lengthwise about three-fourths of the way up.
  3. Scoop out the flesh of each sweet potato into a medium bowl, leaving about a quarter-inch in the skin. Mash the sweet potato flesh until smooth, then mix in butter, maple syrup, salt, and cinnamon.
  4. Stuff each potato back with the mashed mixture. In another bowl, combine chopped pecans, flour, additional cinnamon, melted butter, and maple syrup until crumbly. Sprinkle this mixture over each stuffed potato.
  5. Place the stuffed sweet potatoes back into the oven for another 20 to 30 minutes at 350F degrees until heated through and the topping is golden brown and crispy.
