Method
Prepare the Crust and Topping
- Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a mixing bowl, combine melted butter and brown sugar until smooth.
- Add flour, oats, baking soda, and salt. Mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish.
Make the Peach Filling
- In another bowl, mix sliced peaches, granulated sugar, lemon juice, cornstarch, and cinnamon.
- Spread the peach mixture evenly over the crust in the baking dish.
Assemble and Bake
- Crumble the remaining oat mixture over the peach filling.
- Bake in the preheated oven for 35-40 minutes, or until golden brown.
- Allow to cool before cutting into bars.
