Ingredients
  

Crust and Topping
  • 1 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Peach Filling
  • 4 cups fresh peaches peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Crust and Topping
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth.
  3. Add flour, oats, baking soda, and salt. Mix until crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish.
Make the Peach Filling
  1. In another bowl, mix sliced peaches, granulated sugar, lemon juice, cornstarch, and cinnamon.
  2. Spread the peach mixture evenly over the crust in the baking dish.
Assemble and Bake
  1. Crumble the remaining oat mixture over the peach filling.
  2. Bake in the preheated oven for 35-40 minutes, or until golden brown.
  3. Allow to cool before cutting into bars.
