Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 can cream of chicken soup Can substitute with homemade if preferred.
  • 1 cup sour cream For creaminess.
  • 1 cup frozen mixed vegetables Thawed.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1 cup crushed butter crackers Such as Ritz.
  • 1/4 cup butter, melted For binding the topping.

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, mixed vegetables, garlic powder, onion powder, salt, and black pepper.
  3. Mix until well combined and pour the mixture into a greased 9x13 inch baking dish.
Add the Topping
  1. In a separate bowl, mix the crushed butter crackers with melted butter until evenly coated.
  2. Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
Bake
  1. Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
  2. Remove from the oven and let it cool for a few minutes before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
