One-Pot Bacon Broccoli Mac and Cheese

Ingredients
  

Pasta and Vegetables
  • 8 oz elbow macaroni
  • 2 cups broccoli florets fresh or frozen
Bacon and Seasoning
  • 6 slices bacon chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Cheese Sauce
  • 2 cups chicken broth or vegetable broth
  • 1 cup milk whole or 2%
  • 2 cups cheddar cheese shredded
  • 1 cup cream cheese softened

Method
 

Cook Bacon
  1. In a large pot over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove bacon and set aside, leaving the drippings in the pot.
Cook Pasta and Broccoli
  1. In the same pot, add the chicken broth, milk, garlic powder, onion powder, salt, and black pepper. Bring to a boil.
  2. Add the elbow macaroni and broccoli florets. Stir well and reduce heat to medium-low. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
Make Cheese Sauce
  1. Once the pasta is cooked, stir in the cream cheese until melted and smooth.
  2. Add the shredded cheddar cheese gradually, stirring until fully melted and creamy.
Combine and Serve
  1. Stir the cooked bacon back into the pot. Serve hot, garnished with extra cheese if desired.

Notes
