Cook Chicken
- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, oregano, and paprika. Add chicken to the skillet and cook for about 5-7 minutes on each side until golden brown. Remove chicken and set aside.
Sauté Vegetables
- In the same skillet, add onion, garlic, bell pepper, and zucchini. Sauté for about 5 minutes until softened.
Add Rice and Broth
- Stir in the rice and chicken broth. Bring to a boil, then reduce heat to low.
Combine and Cook
- Return the chicken to the skillet, nestling it into the rice. Cover and simmer for about 20 minutes until the rice is cooked and chicken is tender.
Serve
- Remove from heat, fluff the rice with a fork, and garnish with fresh parsley and lemon wedges. Serve warm.
