One Pan Mediterranean Chicken And Rice

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken thighs or breasts
Vegetables
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup chopped bell pepper any color
  • 1 cup chopped zucchini
  • 1 cup cherry tomatoes halved
Rice and Spices
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth or water
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil
Garnish
  • 1/4 cup fresh parsley chopped
  • 1 lemon wedges for serving

Method
 

Cook Chicken
  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, oregano, and paprika. Add chicken to the skillet and cook for about 5-7 minutes on each side until golden brown. Remove chicken and set aside.
Sauté Vegetables
  1. In the same skillet, add onion, garlic, bell pepper, and zucchini. Sauté for about 5 minutes until softened.
Add Rice and Broth
  1. Stir in the rice and chicken broth. Bring to a boil, then reduce heat to low.
Combine and Cook
  1. Return the chicken to the skillet, nestling it into the rice. Cover and simmer for about 20 minutes until the rice is cooked and chicken is tender.
Serve
  1. Remove from heat, fluff the rice with a fork, and garnish with fresh parsley and lemon wedges. Serve warm.

Notes
