Ingredients
  

Shrimp and Zucchini
  • 1 pound large shrimp peeled and deveined
  • 4 medium zucchini spiralized
  • 4 cloves garlic minced
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon red pepper flakes optional for heat
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon juice freshly squeezed
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Cooking the Shrimp
  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
Adding Zucchini Noodles
  1. Add the spiralized zucchini to the skillet with the shrimp. Toss everything together and cook for an additional 3-4 minutes until the zucchini is tender but still crisp.
  2. Squeeze fresh lemon juice over the dish and stir to combine.
Serving
  1. Remove from heat, garnish with chopped parsley, and serve immediately.
