My Favorite Detox Salad!

A vibrant mix of fresh vegetables that bursts with flavor and nutrition, perfect for a quick lunch or a colorful addition to gatherings.

Ingredients
  

  • 2 cups kale
  • 2 cups broccoli florets
  • 2 cups brussels sprouts roughly chopped
  • 2 cups red cabbage roughly chopped
  • 1 cup carrots roughly chopped
  • 1/2 cup fresh parsley
  • 1/2 cup almonds
  • 1 to 2 tablespoons sunflower seeds
  • 3 tablespoons olive oil
  • 1/2 cup lemon juice or juice of two lemons
  • 1 tablespoon fresh ginger peeled and grated
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey or maple syrup
  • 1/4 teaspoon salt

Method
 

  1. Using a food processor, process all the veggies up to the parsley until finely chopped. Mix them together in a large bowl.
  2. Throw some almonds into the food processor and pulse them until they're roughly chopped. Combine these with the sunflower seeds into your large bowl filled with veggies.
  3. In a small bowl, whisk together all the ingredients for the dressing until well combined. Drizzle this vibrant dressing over your salad mixture.
  4. Give everything a good toss so that every piece of vegetable gets coated in the dressing. Store in a mason jar for freshness until ready to serve.
