Method
- Using a food processor, process all the veggies up to the parsley until finely chopped. Mix them together in a large bowl.
- Throw some almonds into the food processor and pulse them until they're roughly chopped. Combine these with the sunflower seeds into your large bowl filled with veggies.
- In a small bowl, whisk together all the ingredients for the dressing until well combined. Drizzle this vibrant dressing over your salad mixture.
- Give everything a good toss so that every piece of vegetable gets coated in the dressing. Store in a mason jar for freshness until ready to serve.
