Ingredients
  

Base Ingredients
  • 1 cup rolled oats Old-fashioned oats work best.
  • 1/2 cup protein powder Chocolate or vanilla flavor.
  • 1/4 cup honey Can substitute with maple syrup for vegan option.
  • 1/4 cup natural peanut butter Or almond butter.
Flavoring Ingredients
  • 1/2 teaspoon peppermint extract Adjust to taste.
  • 1/4 cup mini chocolate chips Dark or semi-sweet chocolate.
Optional Toppings
  • 1/4 cup shredded coconut Unsweetened, for rolling.

Method
 

Mix Ingredients
  1. In a mixing bowl, combine rolled oats, protein powder, honey, and peanut butter.
  2. Add peppermint extract and mini chocolate chips, mixing until well combined.
Form Balls
  1. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball.
  2. Repeat until all mixture is used, placing the balls on a baking sheet lined with parchment paper.
Chill and Serve
  1. Refrigerate the protein balls for at least 30 minutes to firm up.
  2. Enjoy as a snack or post-workout treat!
