Mint Buttercream Frosting

Ingredients
  

  • 2 cups unsalted butter room temperature
  • 5 cups powdered sugar
  • 2 tsp vanilla extract
  • 2 tsp mint extract
  • ½ tsp salt
  • ¼ cup heavy cream
  • 1-2 drops gel food coloring 1 drop green + 1 drop teal for mint green color

Method
 

  1. In the bowl of a stand mixer fitted with a paddle attachment or using an electric hand mixer, whip the room temperature butter for about 5 minutes until it becomes light, fluffy, and pale in color.
  2. Add half of the powdered sugar to the whipped butter and mix on the lowest speed setting until fully combined. Then, add the remaining powdered sugar and continue mixing on low until everything is incorporated.
  3. Pour in the vanilla extract, mint extract, and salt; mix on low until everything is combined. Slowly drizzle in the heavy cream while mixing on low speed.
  4. Increase the mixer speed to medium and whip the buttercream for about 2 to 3 minutes until it's smooth and creamy. Switch back to low speed and mix for several more minutes.
