Method
Prepare the Dough
- In a large mixing bowl, combine masa harina, baking powder, and salt. Mix well.
- Add softened vegetable shortening and chicken broth. Mix until a smooth dough forms.
Prepare the Filling
- In another bowl, combine shredded chicken, salsa, cumin, and garlic powder. Mix until well combined.
Assemble the Tamales
- Take a soaked corn husk and spread about 1/4 cup of dough in the center.
- Add 2 tablespoons of filling on top of the dough.
- Fold the sides of the husk over the filling and then fold the bottom up to secure it.
- Repeat with remaining husks, dough, and filling.
Steam the Tamales
- Place tamales upright in a steamer, with the open end facing up.
- Cover with a damp cloth and steam for about 1 to 1.5 hours, or until the masa pulls away from the husk easily.
