Ingredients
  

Meatloaf Ingredients
  • 1 lb Ground Chicken
  • 1 cup Breadcrumbs Use plain or Italian
  • 1 large Egg Beaten
  • 1 cup Parmesan Cheese Grated
  • 4 cloves Garlic Minced
  • 1 tsp Dried Oregano
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black Pepper Freshly ground
  • 1/4 cup Milk Whole or low-fat
Topping Ingredients
  • 1/2 cup Ketchup
  • 1/4 cup Parmesan Cheese Grated
  • 1 tbsp Dried Parsley Optional for garnish

Method
 

Prepare the Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, beaten egg, grated Parmesan, minced garlic, oregano, salt, pepper, and milk.
  3. Mix until just combined, being careful not to overmix.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
Add Topping
  1. In a small bowl, mix together ketchup and grated Parmesan for the topping.
  2. Spread the ketchup mixture evenly over the top of the meatloaf.
Bake
  1. Bake in the preheated oven for 60 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Let the meatloaf rest for 10 minutes before slicing.
  3. Garnish with dried parsley if desired and serve warm.

Notes
