Cook the Beef
- In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
- Break the beef apart with a wooden spoon as it cooks.
Add Vegetables
- Add the sliced red onion and minced garlic to the skillet, cooking for 2 minutes until fragrant.
- Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.
Season and Serve
- Sprinkle the oregano, basil, salt, and black pepper over the mixture. Stir well to combine and cook for another 2 minutes.
- Remove from heat and serve hot, garnished with feta cheese and fresh parsley.
