Ingredients
  

Protein
  • 1 pound ground beef preferably lean
Vegetables
  • 1 cup bell pepper diced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 small red onion sliced
  • 2 cloves garlic minced
Seasoning
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Garnish
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Beef
  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
  2. Break the beef apart with a wooden spoon as it cooks.
Add Vegetables
  1. Add the sliced red onion and minced garlic to the skillet, cooking for 2 minutes until fragrant.
  2. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.
Season and Serve
  1. Sprinkle the oregano, basil, salt, and black pepper over the mixture. Stir well to combine and cook for another 2 minutes.
  2. Remove from heat and serve hot, garnished with feta cheese and fresh parsley.
