Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into strips
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Taco Fillings
  • 8 small corn tortillas
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh parsley chopped
Yogurt Sauce
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Marinate Chicken
  1. In a mixing bowl, combine olive oil, oregano, paprika, garlic powder, salt, and black pepper. Add chicken strips and toss to coat. Marinate for at least 15 minutes.
Cook Chicken
  1. Preheat the grill over medium-high heat. Grill the marinated chicken strips for about 5-7 minutes on each side or until fully cooked.
Prepare Yogurt Sauce
  1. In a small bowl, mix together Greek yogurt, lemon juice, minced garlic, salt, and black pepper until smooth.
Assemble Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side. Fill each tortilla with grilled chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Drizzle with yogurt sauce.
