Ingredients
  

  • 3 tablespoons olive oil divided
  • 1 medium onion diced
  • 1 tablespoon garlic minced
  • 1 cup baby spinach chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Sauté onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for another 30 seconds.
  2. In a large bowl, mix the sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. Heat the remaining olive oil in a skillet over medium heat. Cook patties for about 5–6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels and serve warm with garnishes as desired.
