- Sauté onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for another 30 seconds.
- In a large bowl, mix the sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well combined.
- Shape the mixture into approximately eight patties (½ inch thick).
- Heat the remaining olive oil in a skillet over medium heat. Cook patties for about 5–6 minutes on each side until golden brown and cooked through.
- Drain on paper towels and serve warm with garnishes as desired.
