Ingredients
  

Chicken and Marinade
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil for marinating
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Rice
  • 1 cup long-grain rice such as basmati or jasmine
  • 2 cups chicken broth or water
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt
Toppings
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/4 cup parsley chopped for garnish
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
Cook the Rice
  1. In a medium saucepan, heat olive oil over medium heat. Add the rice and toast for 2-3 minutes. Add chicken broth and salt, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
Cook the Chicken
  1. In a large skillet over medium-high heat, add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
Prepare the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, dijon mustard, and minced garlic until well combined.
Assemble the Bowls
  1. In serving bowls, layer the cooked rice, topped with the cooked chicken, cherry tomatoes, cucumber, feta cheese, red onion, and parsley. Drizzle with the dressing before serving.
