Ingredients
  

Meat and Vegetables
  • 1 lb Beef or chicken Cut into bite-sized pieces
  • 2 medium Potatoes Peeled and cubed
  • 1 medium Onion Chopped
  • 1 cup Carrots Sliced
Curry Base
  • 2 tbsp Massaman curry paste Adjust to taste
  • 1 can Coconut milk Full-fat for richness
  • 2 tbsp Fish sauce
  • 1 tbsp Brown sugar For sweetness
  • 1 cup Beef or chicken broth
Garnish
  • 1 tbsp Chopped peanuts For topping
  • 2 tbsp Fresh cilantro Chopped, for garnish

Method
 

Prepare the Ingredients
  1. Chop the meat, potatoes, onion, and carrots into bite-sized pieces.
  2. Measure out the curry paste, coconut milk, fish sauce, brown sugar, and broth.
Cook the Curry
  1. In a large pot, heat a little oil over medium heat and sauté the onions until translucent.
  2. Add the meat and cook until browned on all sides.
  3. Stir in the Massaman curry paste and cook for 2 minutes until fragrant.
  4. Pour in the coconut milk and broth, then add the potatoes and carrots.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the meat is tender.
Serve
  1. Taste and adjust seasoning with fish sauce or sugar if needed.
  2. Serve hot, garnished with chopped peanuts and cilantro.
