Prepare Sweet Potatoes

- In a bowl, whisk together maple syrup, soy sauce, Dijon mustard, and minced garlic to create the glaze.
- Heat a skillet over medium heat and add the chicken breasts.
- Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through.
- During the last few minutes of cooking, brush the chicken with the maple glaze.
- Ensure the internal temperature of the chicken reaches 165°F (75°C).

- Remove the sweet potatoes from the oven and let cool slightly.
- Serve the glazed chicken alongside the roasted sweet potatoes.
- Drizzle any remaining glaze over the chicken before serving.
