Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Maple Glaze
  • 1/2 cup pure maple syrup
  • 2 tablespoons soy sauce low sodium recommended
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed sweet potatoes with olive oil, salt, and black pepper.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
Prepare Chicken
  1. In a bowl, whisk together maple syrup, soy sauce, Dijon mustard, and minced garlic to create the glaze.
  2. Heat a skillet over medium heat and add the chicken breasts.
  3. Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through.
  4. During the last few minutes of cooking, brush the chicken with the maple glaze.
  5. Ensure the internal temperature of the chicken reaches 165°F (75°C).
Serve
  1. Remove the sweet potatoes from the oven and let cool slightly.
  2. Serve the glazed chicken alongside the roasted sweet potatoes.
  3. Drizzle any remaining glaze over the chicken before serving.
