Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Lemon Curd Filling
  • 1/2 cup lemon juice freshly squeezed
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup unsalted butter cut into pieces
  • 1 tablespoon lemon zest
Topping
  • 1/4 cup granulated sugar for caramelizing

Method
 

Prepare Lemon Curd
  1. In a saucepan, combine lemon juice, sugar, and eggs. Whisk until smooth.
  2. Cook over medium heat, stirring constantly until thickened, about 10 minutes.
  3. Remove from heat and stir in butter and lemon zest until fully melted and combined.
  4. Transfer to a bowl, cover with plastic wrap, and refrigerate until chilled.
Make Cookie Dough
  1. In a mixing bowl, cream together softened butter and sugar until light and fluffy.
  2. Add egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture.
  4. Mix until just combined, then refrigerate the dough for 15 minutes.
Assemble and Bake Cookies
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop dough onto the baking sheet, creating a small well in the center of each cookie.
  3. Fill each well with chilled lemon curd.
  4. Bake for 12-15 minutes until edges are golden. Let cool completely.
Caramelize Sugar Topping
  1. Sprinkle a thin layer of granulated sugar over the cooled cookies.
  2. Using a kitchen torch, carefully caramelize the sugar until golden and crispy.
  3. Allow to cool for a minute before serving.
