Prepare Lemon Curd

Assemble and Bake Cookies
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop dough onto the baking sheet, creating a small well in the center of each cookie.
- Fill each well with chilled lemon curd.
- Bake for 12-15 minutes until edges are golden. Let cool completely.
Caramelize Sugar Topping
- Sprinkle a thin layer of granulated sugar over the cooled cookies.
- Using a kitchen torch, carefully caramelize the sugar until golden and crispy.
- Allow to cool for a minute before serving.
