Ingredients
  

Potatoes
  • 4 large russet potatoes scrubbed and dried
Steak
  • 1 pound sirloin steak trimmed and cut into bite-sized pieces
Toppings
  • 1 cup shredded cheddar cheese for topping
  • 1/2 cup sour cream for topping
  • 1/4 cup chopped green onions for garnish
  • 2 tablespoons olive oil for cooking steak
  • to taste salt for seasoning
  • to taste black pepper for seasoning

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C). Pierce each potato several times with a fork. Rub with olive oil and sprinkle with salt. Place on a baking sheet and bake for 45 minutes or until tender.
Cook the Steak
  1. While the potatoes are baking, heat olive oil in a skillet over medium-high heat. Season the steak pieces with salt and pepper. Add to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked to your desired doneness.
Assemble the Loaded Potatoes
  1. Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Fill each potato with cooked steak, top with cheddar cheese, sour cream, and green onions.
