Method
Cook the Orzo
- Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
- Drain the orzo in a colander and set aside.
Prepare the Shrimp
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp, salt, and pepper. Cook for 3-4 minutes until the shrimp are pink and cooked through.
Make the Dressing
- In a mixing bowl, whisk together lemon juice, lemon zest, honey, Dijon mustard, olive oil, and dried oregano until well combined.
Combine and Serve
- In the skillet with the shrimp, add the cooked orzo, cherry tomatoes, and dressing. Toss to combine and heat through for 2 minutes.
- Remove from heat and top with crumbled feta and chopped parsley before serving.
