Lemon Feta Orzo Shrimp

Ingredients
  

For the Orzo and Shrimp
  • 1 cup Orzo pasta uncooked
  • 1 lb Shrimp peeled and deveined
  • 2 tbsp Olive oil for cooking
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
For the Dressing
  • 1 lemon Juice freshly squeezed
  • 1 tbsp Lemon zest fresh
  • 1 tbsp Honey optional
  • 1 tbsp Dijon mustard
  • 1 tbsp Olive oil extra for dressing
  • 1 tsp Dried oregano
For Topping
  • 1 cup Feta cheese crumbled
  • 1 cup Cherry tomatoes halved
  • 1 4 Fresh parsley chopped for garnish

Method
 

Cook the Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
  2. Drain the orzo in a colander and set aside.
Prepare the Shrimp
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the shrimp, salt, and pepper. Cook for 3-4 minutes until the shrimp are pink and cooked through.
Make the Dressing
  1. In a mixing bowl, whisk together lemon juice, lemon zest, honey, Dijon mustard, olive oil, and dried oregano until well combined.
Combine and Serve
  1. In the skillet with the shrimp, add the cooked orzo, cherry tomatoes, and dressing. Toss to combine and heat through for 2 minutes.
  2. Remove from heat and top with crumbled feta and chopped parsley before serving.
