Ingredients
  

Meatballs
  • 1 lb ground beef or ground pork
  • 1/2 cup bread crumbs preferably panko
  • 1 large egg beaten
  • 3 tablespoons soy sauce low sodium
  • 2 teaspoons sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon green onion chopped
  • 1 teaspoon black pepper
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup carrots sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Sauce
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Method
 

Prepare the Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground beef, bread crumbs, egg, soy sauce, sesame oil, garlic, ginger, green onion, and black pepper. Mix until well combined.
  3. Shape the mixture into 1-inch meatballs and place them on a baking sheet.
Bake the Meatballs
  1. Bake the meatballs in the preheated oven for 20 minutes, or until cooked through and browned.
  2. Use a meat thermometer to ensure they reach an internal temperature of 160°F (70°C).
Prepare the Vegetables
  1. While the meatballs are baking, heat olive oil in a skillet over medium heat.
  2. Add bell pepper, zucchini, and carrots. Season with salt and pepper. Sauté for about 5-7 minutes until tender.
Make the Sauce
  1. In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture.
  2. Heat over medium heat until the sauce thickens, about 3-5 minutes.
Serve
  1. Once the meatballs are done, toss them in the sauce.
  2. Serve the meatballs over the sautéed vegetables.
