Chicken Salad Base
  • 2 cups cooked chicken shredded or diced
  • 1 cup cottage cheese full-fat
  • 1/2 cup mayonnaise preferably avocado oil-based
  • 1 cup jalapenos fresh, diced
  • 1 cup cheddar cheese shredded
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 avocado sliced for serving

Method
 

Prepare the Chicken Salad
  1. In a large mixing bowl, combine the cooked chicken, cottage cheese, mayonnaise, diced jalapenos, and shredded cheddar cheese.
  2. Add garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
